This is a delightful twist on chicken salad courtesy of the Brits for the occasion of Queen Elizabeth II’s coronation way back in the day.
I discovered coronation chicken when I was staying in Glasgow and it’s a nice twist on your typical chicken salad. This is available ready-made at pretty much every grocery store. But with a recipe this easy, you can make it yourself! I popped in to the British Emporium to get my mango chutney, but you can get it from wherever. I really just wanted an excuse to go in for a wee look round.
You’re gonna need:
75g (3 oz) mango chutney
1 teaspoon curry powder
1 dessertspoon lime zest
4 tablespoons fresh lime juice
1/2 teaspoon salt
500g (1 1/4 lb) skinless, boneless chicken breast fillets – cooked and diced
This recipe is so hard, y’all. Are you ready?
In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt. Add chicken and toss with the dressing until well coated. Cover and chill until serving.
Popular ways to eat coronation chicken are either in a sandwich or with salad.

I left off the lime zest cause i’m a bit lazy and couldn’t be bothered with zesting a lime. or, actually buying a lime. It was delicious without.
Coronation chicken tastes a little weird. no lies. but it is yummy. The mango chutney makes it a little on the sweet side and the cure powder puts it on the weird side. What do you think? Fancy a coronation chicken sandwich?
