This is hands-down the best banana bread recipe on the planet. I’ve been lucky enough to have been fed this gift from the heavens by Little J’s mom since infancy. She got this recipe off a lovely old lady from our church. And it was passed down to her by her mother. And now, I’m going to share it with you.
Here’s what you’ll need:
1 cup sugar
1/2 cup butter
1 1/2 cups flour
3 old bananas
1/2 cup chopped nuts (these are optional – I don’t ever use them though)
1 teaspoon baking soda
4 tablespoons buttermilk
1 teaspoon vanilla
First off, preheat your oven to 350ºF/175ºC.
Then, melt your butter.
Sift the sugar and flour into the melted butter.
Add the eggs.
|the dough should be nice and sticky now.|
Peel and mash the bananas with a fork.
Add the mashed ‘nanas (and nuts, if you’re feeling nutty) to the butter mixture.
Mix the baking soda, buttermilk and vanilla together. Then add to the butter and ‘nanas.
Mix by hand. This is very important. You don’t want an electric beater to kill the bread.
Cook in a loaf tin for about 1 hour (or until a toothpick comes out clean).
Rambo liked it with a bit of chocolate added in place of the nuts. We used about a 1/2 a milk chocolate bar that was chopped. It settled at the bottom – making a nice chocolatey bottom to the banana bread.
Serve this warm and with a knob of butter for maximum enjoyment.
