or as Rambo says it, cauleeflower crust pizza. :] I am always looking for yummy ways to trick myself into eating more veg and less “bad” stuff. I call it “bad” because if I ate the prescribed amounts, it’d be fine. Unfortunately, I give into the carb desires far more often than I ought to.  Cassey from Blogilates put up this amazing video about a flourless pizza – using cauliflower as the crust.

I was skeptical at first because I’ve tried a cauliflower crust pizza before and it was rubbish. The taste of the cauliflower was so strong, I couldn’t hardly stand it. And it tasted NOTHING like pizza crust.

Being ever the adventurer, I decided to try Cassey’s recipe. What’s the worst that could happen? I did make a few modifications because I hate onions and I’m not a fan of (bell) peppers either. Mom and I opted for a pizza of spinach, mushrooms, chicken and a couple of pieces of andouille sausage. This pizza was amazing! Even Rambo agreed that this crust tasted like pizza crust!

Here’s the recipe from Cassey:

RECIPE for 1 medium pizza (8 slices):
Crust:
– 1 cup of shredded cauliflower or 1/3 of a head of cauliflower
– 1/2-3/4 cup of shredded mozzarella cheese
– 1 egg
– 1 tsp dried oregano
– 1/2 tsp crushed garlic
Toppings (up to you):
– 1/2 cup pizza sauce
– 1 cup mushrooms
– 1 cup fresh baby spinach
– 2-3 chicken tenders
DIRECTIONS:
 
1. Shred cauliflower in a food processor

2. Microwave in a bowl for 8 min
After the riced cauliflower has been steamed in the microwave.
Yum!
3. Mix in about 1/2 cup of cheese, save rest for topping
Cheese makes everything better.
4. Crack the egg and mix all ingredients together
I tried the one-handed crack – Needs some work!
Mix-Mix-Mix!
5. Spray pan with PAM and make a nice base of cauli-cheese crust. I would recommend putting parchment paper or aluminum foil underneath so it doesn’t stick so badly.
Rambo is an expert crust-maker.
6. Bake in oven for 10-15 min at 350F
7. Then take out crust, top with sauce and toppings
8. Place back in oven for another 10-15 min

Here is our how our pizza came out. The only draw-back was that the pizza needed a fork and knife as the crust was a bit flimsy. But we only cooked it for about 10 minutes and then were too hungry/excited to wait any longer!


This recipe for a cauliflower crust is AMAZING. Even if you don’t like cauliflower. I HIGHLY recommend everyone try this pizza.
